
Semi Dried Tomatoes
I have to say that I’m a bit of a tomato fanatic. I always have quite a big of amount of tomatoes on my kitchen table. And NO tomatoes do not belong in the fridge and there is no tomato worse than a cold tomato.
Semi dried tomatoes is something that I used to buy until I found out how simple it was to make them myself and saving quite a bit of money at the same time.
I use those in so many things, in salad, on pizza, in the sandwich and on the antipasti platter. I encourage all you tomato fans to try this, you won’t be looking back.

Semi dried tomatoes for your salad, pizza or the antipasti platter

Ingredients
- 500 gr. small Tomatoes
- 1/2 tbsp dried Herbs, i.e. Herbs de Provence
- Salt & Pepper
- 3/4 cup Olive Oil
Instructions
- Preheat oven to 110°C/230°F and line a baking tray with baking paper.
- Cut your tomatoes in half, in quarters if you have bigger ones, and arrange them with the cut side up in the baking tray.
- Sprinkle with dried herbs, salt and pepper.
- Bake in the oven for about 2 hours or until the edges are dry and the middle is semi soft.
- Let them cool down completely and store them in a clean jar with olive oil.
