Semi Dried Tomatoes

I have to say that I’m a bit of a tomato fanatic. I always have quite a big of amount of tomatoes on my kitchen table. And NO tomatoes do not belong in the fridge and there is no tomato worse than a cold tomato.

Semi dried tomatoes is something that I used to buy until I found out how simple it was to make them myself and saving quite a bit of money at the same time.

I use those in so many things, in salad, on pizza, in the sandwich and on the antipasti platter. I encourage all you tomato fans to try this, you won’t be looking back.

Ingredients
  1. 500 gr. small Tomatoes
  2. 1/2 tbsp dried Herbs, i.e. Herbs de Provence
  3. Salt & Pepper
  4. 3/4 cup Olive Oil
Instructions
  1. Preheat oven to 110°C/230°F and line a baking tray with baking paper.
  2. Cut your tomatoes in half, in quarters if you have bigger ones, and arrange them with the cut side up in the baking tray.
  3. Sprinkle with dried herbs, salt and pepper.
  4. Bake in the oven for about 2 hours or until the edges are dry and the middle is semi soft.
  5. Let them cool down completely and store them in a clean jar with olive oil.
