Mediterranean Marinade


Everything wakes up in the spring and that also includes me. I am not at all a winter person and would just basically want to skip that season. In the springtime I love working in the garden and start planting, but at the same time I am not much of a flower girl. I think there are a very few things as satisfying as growing your own herbs, fruits and vegetables, and that is how I think of my garden it is not big but I manage to make the best of it.

It is surprisingly how much you can grow in a small space it is just a matter of trying.

As I grew up in Iceland and now living in Denmark I am used to long winters and spring that sometimes never seems to arrive. So when it finally arrives you just want to suck up every single drop of sunshine you can and just enjoy the lovely weather.

One of the things that we do a lot of is taking out the barbecue. It is kind of funny when you think of it, Iceland has maybe very short summers and long winters but we barbecue like crazy and I have actually seen my father doing that in the snow.


This recipe is very short and easy, it is a simple marinade for all kinds of meat. I think it works very well with lamb, but I have also used it for pork and chicken.

  1. 1/2 jar Sun dried Tomatoes in Oil
  2. Handful fresh Basil
  3. 5 sprigs fresh Oregano
  4. 2 cloves Garlic
  5. Salt & Pepper
  1. Put everything in a food processor and work it very well together for a few minutes. Put your meat in a container with a good lid and spread the marinade evenly in everything. The best thing is to leave it in the fridge overnight but 6 – 8 hours is fine.
  1. This recipe is good for 500 gr. of meat.
